Announcement

Our intention is to be a loose group of like minded paddlers who are interested in 'Tripping and Journeying' on the water, whether it be flat, moving or white water.

If you are a guest you are welcome to view the forum. A few sections are unavailable but upon registering the whole forum is available for you to view and partake in.

There are other Canoeing forums out there in cyberspace, many of us are members of these too. At BSP we don't want to recreate the content of these other forums, but we also understand that some crossover is inevitable.

Beef Jerky.

Had a taste of some hot Beef jerky yesterday whilst out canoeing, lovely stuff, now is there anywhere online I can buy jerky from and how long does it keep?

Cheers Sundown just so happens I have a smoker out the back the same as in the vid, never did no how to use it properly, going to give that a go.

Still want to know where you get decent ready made stuff as well?

Try www.Britishbeefjerky.co.uk it will tell you the nearest shop to you it's the same as you tryed you can buy online to

But I am going to have a go at making my own on the smoker out back, what I want to know is does it have to be a prime steak or can you use cheaper frying steak for instance?

never made it but have bin told to use Select a cut of meat. Choosing a lean cut like sirloin, top round, or eye round will save time later. hope that helps . you will have to let me try some after you make some: =D

I was paddling on the Severn yesterday. At lunchtime my mate pulled out some chilli billtong, very nice indeed.

We (my friend and I) were not experts at skinning and butchering deer... but were competent enough.  Tended to end up with some nice cuts for roasting / grilling and assorted bits that we were quite happy to try turning into jerky.  Living there, on the edge of the Oconee national forest, and making jerky as part of a way of life was great at the time.

The best jerky we had was when I took home a very young deer that had been hit by the truck in front of us: can't recall which cuts made the best jerky, but the best of it was stunning!  If I happen across a roadkill here anytime soon... I might just try and repeat that experience

We use Neck. It works perfectly well enough. Tend to find that Sika makes the best, unlike most everything else venisonny where I would plump Muntjac everytime Also dry mine out over a fire... Ray Mears style, the advantage of having few neighbours! Just a little salt and nothing else.

Last year we were camping and stalking from the tent in the far north. One of the beasts shot by a client the gamedealer wouldnt accept, so instead of throwing it away (not having a fridge) we jerkied nearly the whole thing, all 80lbs. I still have some in the cupboard!

No keep meaning to get some nice lean beef and have a go but never seem to get round to it, but it's still on the radar.
